Jeffrutt:Well, that took care of it. THANKS.
I never had that "button" in past versions OR I should say, it never effected it in the same way. This has also taken care of me naming the file and the project separately Whoa, killed to birds with one stone! THANKS!!!!!!!
FYI to all, there is a Virtual Knowledge Base article on this subject in the Quark Virtual Knowledge Base. I am copying the article below, but you can view the article through the Virtual Knowledge Base directly at:

How to create PDF with only one name
Applies to: QuarkXPress 7 & 8, All Mac OS, All Windows
Introduction: I want to be able to print to PDF via PDF Writer through the Print dialog, but I only want the a single project or layout name rather than "Project Name : Layout Name." How can I do this?
More Information: In order for QuarkXPress 7 and 8 to assign a single name to the name of a PDF or PostScript file generated through the Print dialog, select the checkbox for "Single Layout Mode" in the New Project
dislog. If you have an existing project that you created without
selecting this checkbox, you can change the mode of an existing project
to Single Layout Mode. To do this go to QuarkXPress > Preferences (Windows: Edit > Preferences) and selecti Single Layout Mode in the Project General Preferences pane.
Note: If
you have more than one layout in a project, you will not be able to
change a Multiple Layout project into a Single Layout project.
