You can do that in QuarkXPress but only when you convert text to boxes (which can be anchored too).

sorry, not sure what you mean? Do you mean whether you apply a gradient to a text box? Yes, you can. Or whether you can edit a gradient that you have created and named? That's not possible directly, you need to apply it to a box, edit it and save again (and replace).
