How do I disable basic 'editing' touch function?

I have nearly completed my childrens' interactive book. However, the basic editing functions appear when the child presses for too long on text, or on any graphic elements on the screen. The ipad screen finger-pressed area displays the "copy/define/search' text, along with blue transparent selection box with the blue circular handles. I don't want this to happen. It confuses the child and slows down the progression through the book.
Could you please tell be how to disable this.
